to Paris from London via Chunnel

Do all trains from London to Paris go by way of the Chunnel? Is that what it is really called?

Where in London do you pick up the train?

I'd appreciate any information on sites that can give me rates and schedules- also, if we get back to London late at night, will the underground still be running?
